WALNUT AND MUSHROOM PASTA

1 onion,
olive oil,
4-5 cloves garlic,
200 gms. finely chopped mushrooms,  
100 gm chopped Walnut, (best fresh from shell)
white wine,
vodka,
cream, 
chopped parsley,
 strip pasta , (Spaghetti or Tagliatelle)

Fry onions in olive oil after a few minutes add garlic then add mushrooms and crushed walnuts. after a few minutes, add white wine and reduce, on brisk fire for 2 minutes then put flaming vodka , turn down heat and leave to reduce more after say 15-20 minutes add cream and parsley. Serve mixed in with favorite pasta. Don't sprinkle Parmesan, maybe instead a bit more chopped Parsley, mmmm autumn or winter dish.
