The Gibsons commenced Ostrich Farming in Lanarkshire in 1995 and established a strong customer base in North & South Lanarkshire & East Renfrewshire. They now work closely with Kezie Ltd. which is the only E.C. Approved Ostrich Slaughtering & Processing Plant in Scotland. Initially the outlets for Ostrich, an extremely healthy meat (See Table), were very limited but the coming of Farmers' Markets allowed for direct contact with the consumer. This allows "Grumpytam!" to advise potential customers on the healthy benefits of eating Ostrich. Both he and Eileen can talk knowledgably about the birds, the meat and how to cook it. Tastings are available at most markets and "Grumpytam!" can rustle up a roll with burger, sausage or steak. Direct sales have steadily increased since 1998 when the Gibson's young birds first came on-stream.

Eileen's Country Kitchen came out of being involved with Farmers' Markets and she has eileengathered together a number of interesting products to augment Grumpytam's homemade chutneys and marmalade. Eileen looks after the jams as she doesn't trust him to get it right. The produce not produced by Eileen or Tom comes from established businesses who sell their own produce at other farmers' market outlets.
Any of the normal produce for sale at the Markets can be purchased direct from the farm but customers are advised to phone to enquire about availablilty. Deliveries can be arranged if required.

OSTRICH - THE HEALTHY ALTERNATIVE

Ostrich meat is simple, versatile and easy to prepare and cook. It is lean, requires little or no trimming, and has very little waste. You can use any of your favourite recipes for beef, pork, chicken or turkey - and the big bonus is that it is healthier than all of them.

Being a red meat, an ostrich steak on your plate is hard to distinguish from beef in appearance. In texture it is very like lamb. It is mils-flavoured meat which lends itself to a great variety of sauces and added flavourings of wine and herbs. Like other meats it freezes well. It is high in iron, calcium and protein. It is now available in fillets, stri-fry, mince, sausages, burgers and smoked. The bird produces very little low quality meat and so sausages, with a very high %age of meat (95 & 75 respectively) are quality products
