RECIPES FROM OESOPHAGEAL PATIENTS
Chicken
& Broccoli Alfredo
Hi Folks, It is worth trying
this one unless you are anti broccoli.
- 4-5 cups broccoli florets
- olive oil
- 4 skinless boneless
chicken breast cut crosswise into 1/3 inch strips
- 1 medium size bell pepper
seeded, sliced thinly
- 2 cups whole milk (original
recipe called for cream)
- 1 1/2 cups grated parmesan
- 1/2 cup grated Monterey
Jack
- 3/4 lb of pasta----your
favourite, for me rigatoni---cooked, strained, toss with 2Tablespoon olive
oil,,set aside
- Steam the broccoli until
just done and set aside
- Heat three Tablespoon
olive oil in a dutch oven (or large heavy based pan) and saute chicken strips
in batches until just cooked through--roughly 4 or 5 minutes. ----transfer
to a bowl
- Add sliced pepper to
dutch oven and saute til just tender
- Add milk, parmesan and
simmer til sauce thickens slightly.
- Add chicken strips and
broccoli,, toss til well coated with sauce.
- Transfer to a prepared
(buttered) baking dish, sprinkle top with Monterey Jack and broil until just
golden on top.
- Lock doors to keep neighbours
out.
- Serve
