RECIPES FROM OESOPHAGEAL PATIENTS

Jan's Chicken and Rice Gruel Porridge

In a pressure cooker for 20 minutes

 

One whole corn fed chicken

Basmati rice uncooked: two generous cupfuls

Finely chopped leeks

Finely chopped onions

Finely chopped carrots

Garlic (if you like it)

Large piece root ginger peeled and divided

Salt (to taste)

 

At the end, take out the chicken bones and larger bits of chicken.

Chop the larger bits of chicken finely and discard the bones**

Retain in container in fridge and take out, (adding a little water/stock) to heat up as and when.

 

**Or use again with residual chopped veg simmered to make a stock to reuse.
