RECIPES FROM OESOPHAGEAL PATIENTS

Fabulous Chocolate cake
FOR
CAKE
- 2
cups flour
- 2
cups sugar
- 1/2
teaspoon salt
- 1
cup chop walnuts
- Combine
and mix above, except walnuts
- 1
stick butter
- 1
cup water
- 1
cup oil
- 6
Tablespoons cocoa

In heavy sauce pan bring above just to boil, mix thoroughly
- Pour
over flour mixture and beat until oil is well incorporated
- 1/2
cup buttermilk
- 2
eggs
- 1
teaspoon vanilla
- 2
teaspoons baking powder
- Beat
together then fold into cake mixture when it has cooled a little but still
quite warm.
- Fold
in 1 cup chopped walnuts
- Bake
in big cake pan, buttered,,the one we use is about 11 by 14, 375 for 40 minutes,
Check for doneness at 30-35 min. best when just done or the cake will fall
when removed from oven.
FOR FROSTING
- 1/2
stick butter
- 2
0z unsweet choc- combine and melt on low heat and beat to mix
- 1
1/4 cups pwdr sugar
- 2-3
Tablespoon cocoa--I use 3
- 6
to 8 oz Philideliphia cream cheese at room temp-do not use low fat cheese,
use only Phildelphia.

Combine all the above and beat thoroughly. FROST cake while still quite warm,
frosting will partially soak into cake which makes it better. Its best the
next day after ageing a bit.
