RECIPES FROM OESOPHAGEAL PATIENTS

JANET'S SOUP

This is my favorite soup/stew, call it what you will. It uses all sorts of things. Base, this time is fish, which I like. Or it could be beef or even chicken I guess.

  1. Saute chopped (any size from dice to chunks) onions, diced celery, diced carrots,
  2. Add Knorr fish cubes, canned tomato chunks, mushrooms, water, of course, frozen fish cut into chunks, left over and/or fresh vegetables, season,
  3. simmer til it tastes good.
  4. I then put into pint size containers and freeze.

When the time comes, I take one out, put in saucepan or microwave and heat. From freezer to eating takes only about 15 minutes. That is my idea of Quick and Easy.
