RECIPES FROM OESOPHAGEAL PATIENTS

Noodle Pudding
- 6 oz. Fine noodles
- 2 Eggs well beaten
- 1/2 Cup sugar
- 1/2 Cup dark brown sugar(packed)
- 1 Cup cottage cheese
- 1 Cup Sour cream
- 1/2 Cup golden seedless
raisons
- 1/2 Cup slivered almonds
- 1/2 Tsp. Cinnamon
- 1/2 Tsp. Nutmeg
- 1/4 Tsp.Salt
- 3 Tsp. Grated lemon
rind
- Cook noodles in boiling
water with 1/4 Tsp. of salt and a little oil. Drain.
- Beat together eggs,
sugar, salt.
- Stir in cottage cheese,
sour cream, lemon peel, raisons, and brown sugar.
- Bake at 350 F. 45 minutes
- let stand a few minutes before serving.
