CHEWY COCONUT
SQUARES
I always used to
badger my mum to make this for primary school parties, so it must
be good!!
INGREDIENTS

4oz crushed
Ginger Nuts |
1oz butter |

1 egg |
2oz caster
sugar |

2oz dessicated
coconut |

METHOD
Melt the butter
and stir into the crushed biscuits. Mix well and sprinkle over
the base of a shallow greased tin. Smooth over with the back of
a spoon. Whisk the egg and sugar together until thick, pale and
foamy. Stir in the coconut, spread the mixture over the biscuit
base and bake at 200°C/Gas Mark 6 for just over 15 minutes.
Allow to cool, then cut into squares.
