CHICKEN SCHNITZEL WITH CREAM SAUCE

This is really tasty and very filling. You could replace the chicken with pretty much any other white meat - it works really well with turkey, which works out quite cheap. If you wanted, you could also replace the breadcrumbs with crushed up water biscuits for a crunchier coating.

Serves 4.

INGREDIENTS

4 chicken breasts, boned

Seasoned flour

1 egg

4oz white breadcrumbs

6oz butter

1 onion, finely chopped

4oz button mushrooms

quarter pint dry white wine

half pint double cream

1 egg yolk

METHOD

Flatten the chicken with a rolling pin. Dip the chicken in flour, then coat with egg and breadcrumbs. Fry the chicken in 4oz of the butter until crisp and golden brown, then drain. Fry the onions in the remaining butter. Add the mushrooms and wine, simmer for 2 - 3 minutes, add the cream and egg yolk and heat through. Season to taste. Arrange the chicken on a plate and serve coated with the cream sauce and garnished with parsley.
