MUSHROOMS Â LA CRÈME

Easy, tasty and quick, for when you don't want a lot to eat. Taken from Nigel Slater's Real Fast Food.

Serves 2 as a light meal or 4 as a starter.

INGREDIENTS

450g/1lb mushrooms

1 clove garlic, crushed

2 tbsp. olive oil

1 branch basil

300ml/0.5 pint single cream

Toasted crusty bread, to serve

METHOD

Cook the mushrooms with a crushed garlic clove in the olive oil for 7-10 minutes.

Season, add the leaves of a healthy branch of basil torn into small pieces and stir in the single cream.

Cook over a gentle heat for a couple of minutes, then serve hot with toast.
