SPAGHETTI WITH GARLIC & MUSHROOMS

I'm afraid this is the only actually recipe I have for a completely veggie main course. Everything else is in my head! But this makes a really rich, tomato-ey sauce for spaghetti.

Serves 4.

INGREDIENTS

4tbsp oil

28oz tin chopped tomatoes

1tsp sugar

1tsp salt

1 bay leaf

12oz button mushrooms

2/3 cloves garlic, crushed

1 tsp dried marjoram

Black pepper

Spaghetti

METHOD

Heat 2 tbsp oil in a pan, add the tomatoes, salt, sugar and bay leaf. Cook slowly for half an hour in a covered pan. Add the sliced mushrooms, garlic, remaining oil and marjoram. Season to taste. Simmer until the mushrooms are tender (15 - 20 minutes), stirring occasionally. Cook and drain the spaghetti, pour on the sauce and serve immediately.
