SPAGHETTI WITH BACON & COURGETTES

This is a really quick and simple one. If you didn't know, Boursin is a garlic-y cream cheese, so anything along those lines would do if you can't get it. You could also replace the courgettes with mushrooms or red pepper - whatever takes your fancy. Taken from the BBC Good Food Magazine.

INGREDIENTS

1 tbsp olive oil

6 rashers streaky bacon

2 courgettes

500g/1lb 2oz fresh spaghetti

80g/3oz Boursin

142ml single cream

METHOD

Heat the oil in a wide frying pan and fry the bacon (cut into strips) until crisp. Toss in the courgettes (cut into sticks) and cook for a few more minutes.

Cook the spaghetti in a large pan of boiling, salted water for 3 minutes, then drain. Add the cheese and cream to the bacon and courgette mixutre to make a sauce, then toss with the spaghetti.
