SWEET & SOUR PORK STIRFRY

It's not the same as the stuff you get from the Chinese take-away, but it's very nice in its own right. It takes a little bit of time to get all the ingredients together, and a lot of it's stuff you wouldn't generally have kicking around in the cupboard, but it makes a pleasant change once in a while so it's worth doing.

Serves 4.

INGREDIENTS

1lb lean pork in thin strips

1tbsp sunflower oil

6 spring onions, sliced

1 clove garlic, crushed

1 green pepper, sliced thinly

1 red pepper, sliced thinly

3 tbsp soy sauce

1 tsp five spice powder

half tsp ground ginger

7oz can water chestnuts, sliced

 7oz can pineapple chunks

2tsp cornflour

METHOD

Heat the oil, add the pork and cook for 5 - 7 minutes. Stir in the spring onion, garlic and peppers and continue to stirfry for 3 - 4 minutes. Add the soy sauce, ginger, five spice powder, water chestnuts and pineapple. Bring to the boil. Blend the cornflour with 2tbsp pineapple juice and add to the stirfry. Stir until thickened. Serve with noodles or rice.
