TAGLIATELLE WITH SMOKED SALMON & MUSHROOMS

This is another really quick, easy supper dish. You can usually get smoked salmon trimmings in the supermarket, which are really cheap. Don't be put off if they look a bit manky in the packet - they're fine once you get them out.

Serves 4.

INGREDIENTS

1 tbsp vegetable oil

250g/9oz mushrooms, quartered

375g/13oz dried tagliatelle

125g smoked salmon

3 tbsp chopped fresh parsley

200ml crème fraîche

Juice of half a lemon

METHOD

Heat the oil in a frying pan. Add the mushrooms and cook for 8 minutes until beginning to brown. Cook the pasta. Stir the salmon, parsley, crème fraîche and lemon juice into the mushrooms and season. Drain the pasta and toss with the creamy sauce.
