4½ litres water
1kg white sugar
1kg Granny Smith apples (thinly sliced)
300g sultanas
3 lemons (thinly sliced)
8 passion fruits
½ tsp tannin


A return to the method of adding yeast to the fruit at the start, rather than to the strained juices thereof later.


DAY 1: 16-06-04
The sugar, tannin, apples and sultanas were added to the water and brought briefly to the boil. Meanwhile the lemons were sliced and the middles from the passion fruits extracted and added to the fermenting bin along with a teaspoon of yeast nutrient. Once boiling the water and fruit were poured into the bin which was then covered and allowed to cool overnight. A starter bottle was prepared.

DAY 2: 17-06-04
The reactivated yeast was stirred into the bucket along with a heaped teaspoon of pectolase. The bucket was lightly covered and left to begin fermenting.

DAY 3: 18-06-04
Stirred.

DAY 4: 19-06-04
Stirred.

DAY 5: 20-06-04
The fermentation had settled somewhat. The solids were strained out of the bright yellow opaque liquid and transferred to a clean demi john and airlocked. The excess liquid was made into a pop bottle ferment for just in case purposes

WEEK 10: 28-08-04
The gravity was measured to be 0.992, indicating fermentation had completed successfully. The clarity was poor, being rather cloudy. The wine was racked and treated with a little Harris Vin Clear. The demi john was returned to storage to clear further.

WEEK 23: 28-11-04
The pale orange brew still hazy, and was racked again, and this time treated with 1/3rd teaspoon of Kwik Clear. The wine was returned the the cupboard to settle.

WEEK 48: 21-05-05
After a long period of neglect the wine was racked off the remaining lees, treated with a crushed campden tablet and half a teaspoon of 'sorbate before passing through the Vin Brite for a final polish. The resulting pale yellow wine was sealed with a safety bung and stored prior to bottling. Though the passion fruit note has diminished with time the wine tastes reasonable.

WEEK 53: 23-06-05
Bottled into green glass. Expect some small sediment in this one, there is still a slight haze present.
