BASIC RECIPE
100 grms each of self raising flour, caster sugar and fat - plus 2 eggs
METHOD
Cream fat and sugar until light and fluffy and creamy
Add one egg and a little flour: mix well
Add second egg and a little flour: this time carefully mix by turning over the
mixture with a metal spoon until all the flour is incorporated into the creamed mixture.
This is to prevent beating out all the air you put in, in the first place when you creamed
the fat and sugar.
Place in paper cases or place in greased and lined sponge tins.
Cook for approximately 15 - 20 minutes depending on the size of the cake
Temperature 180 c or 4/5 gas.
