SECOND METHOD OF CAKE MAKING

SURPRISE! surprise! - this method involves rubbing the FAT into something - that is the FLOUR.

FORMULA = HALF AS MUCH FAT AS FLOUR. e.g. if you have 200 grms flour you use 100 grms fat.

The fat can be Butter        or             Margarine             or                 Lard

You can use Baking powder if you use Plain flour.

You can use Self raising flour which has the raising agent in it already

BASIC RECIPE

200 grms. S.R. flour                 100 grms. Fat
100 grms. Sugar                       2 Eggs
Milk or Orange Juice to mix

METHOD OF MAKING THIS TYPE OF CAKE.

Place flour in bowl:  Cut up fat into small cubes:  Rub fat into flour until it looks like fine breadcrumbs.

OR

Place flour in electric mixer bowl:  Switch on to SLOW:  Drop in small cubes of fat until it looks like fine breadcrumbs.

Add other dry ingredients:  Add beaten eggs:  add liquid so that the mixture is of a dropping consistency.

Place in paper cases and fill only half full - bake approximately 15 minutes until firm to the touch.  Electric 190 c Gas between 4/5.  Cool.
